What a wonderful and heartwarming story Anne. It tugged fiercely at my heart strings. I have never been able to keep a cast iron skillet without it rusting except my collection of Le Creuset which are coated. Now I need your mum inspired fried chicken and I suspect your book Skillet Love will teach me to love the cast iron skillet I will now have to buy. Off to Leah’s for more chicken. 👏🏽

Such a wonderful story, Anne! It brought to mind a Southern boyfriend I once had who made fried chicken in a skillet, though I can’t remember if it was electric or not. I do recall dredging it in seasoned flour in a paper bag. But we didn’t soak it first. It was probably the most delicious chicken I ever had. After we broke up, I never made it again. But your post is inspiring--and I DO have an iron skillet I love. Both these recipes sound like winners.

And, Leah, I’m also heartsick about Roe.

What a wonderful story.

My mom didn't make fried chicken. It either came from KFC or a frozen food box. But, my Tennessee grandma did. I know she just made a simple breading, no idea the seasonings. It would have been a real chicken, meaning you might find a feather or two she may have missed. Yeah. She was a real farmwife. Milk gravy accompanied most meals. And homemade biscuits or cornbread, occasionally light bread.

My mom had one of those electric skillets. She used it for fried squash the way my grandma made it. Hers had the faux pink copper finish. I actually have one I used to use in my basement--it was a wedding gift.
